Behind "Perun" stands a small team driven by the desire and ambition to bring to the Bulgarian table entirely naturally grown wheat, known since ancient times and still valued today – Spelt (Triticum spelta)! A precious raw material highly appreciated in Central and Western Europe. We realized that the challenge of closing the entire production cycle and creating a finished spelt product would be a very serious and responsible task.
From harvesting the crop, through hulling the spelt (the grain is collected from the field with its husk and requires additional cleaning), to milling the flour and producing pasta, couscous, pretzels, noodles – all these activities are part of our everyday work!
Thanks to the rich taste and the higher content of vitamins, minerals and fiber in our products, we are already part of the daily meals of many Bulgarian families. Flours:
Perun spelt flours contain more protein, vitamins A, E, B1, B2 and niacin, fatty acids and minerals than regular wheat. No enhancers or preservatives are used. The grain is grown in the regions of Varna and Dobrich. Spelt flour can be used as a universal substitute for regular wheat flour. Due to its high protein content, spelt flour is also suitable for making homemade pasta.
Bran is increasingly present in the diet of people who live healthily. The high fiber content cleanses the digestive tract and helps reduce cholesterol. We recommend consuming it with yogurt.
Cereals:
We offer spelt grain, flakes and muesli!
Spelt flakes and muesli are excellent options for a healthy breakfast or a quick lunch.
The grain can be milled at home or sprouted. Sprouts are suitable for direct consumption or as an addition to salads.
Pasta:
With pleasure and pride, we invite you to try the first Bulgarian spelt pasta. You can find our tortiglioni and fusilli – white or wholegrain. You will certainly not be disappointed by the combination of excellent taste and, as always, outstanding nutritional value, without added enhancers, preservatives or GMOs. Spelt is especially suitable for pasta production due to its high protein content.
